Ingredients:
3 medium sized uncooked beetroot
1 onion, chopped
3 cups water
1 tbsp olive oil
1 tsp lemon juice
100ml soured cream
salt and pepper to taste
Directions:
Peel and cut beetroot into cubes. In a medium pot , saute onion until translucent, add water and beetroot and simmer for 10 minutes or until beetroot is cooked. Let it cool slightly and blend in a food processor until smooth and creamy. Put it back in a pot and boil again for another 3 minutes, add lemon juice and sour cream. Season with salt and pepper. Serve with a touch of sour cream and green mint leaves.
