Easy Chicken Tacos

 

Ingredients:

For the chicken:

4 chicken breasts, cut in half

1/2 cup breadcrumbs

1/2 cup parmesan cheese, grated


1 lemon zest 

2 tbsp chopped parsley

1 tsp salt

1/2 tsp ground black pepper

3 tbsp olive oil

Mix the breadcrumbs, parmesan cheese, lemon zest and parsley. Set aside.

Flatten the chicken breast with a meat tenderizer. Rub with olive oil on both sides and sprinkle with salt and pepper. 

Coat each chicken with the breadcrumb mixture. Bake at 200C for 30 minutes.

For the Salad:

1 can red kidney beans

1 can black beans

shredded lettuce

1 red onion, sliced thinly

1 medium cucumber, sliced thinly

cherry tomatoes

1 lemon juice

1 tbsp olive oil

salt and pepper

Mix the salad ingredients in a big bowl.

Fold the tortilla bread into half and bake in an oven at 180 C for 8 minutes.

Cut the baked chicken into long strip.

Fill the tortilla with the salad mixture and chicken strip. Serve with cheese , if desired.
