Ingredients:
500 g octopus, cut into pieces
1 carrot, cut into julienned
1 red bell pepper, cut into julienned
1 medium onion, sliced
1/2 cup chopped green onion
3 cloves garlic, minced
2 tbsp grated ginger
2 tbsp vegetable oil
3 tbsp soy sauce
2 tbsp brown sugar
1/4 tsp chili powder
1 tbsp cornstarch
salt and pepper to taste
Directions:
1. Wash the octopus thoroughly, and cut into pieces. Boil water in a medium pot and parboil the octopus for 10 minutes. Remove the water and set aside.
2. In a small bowl, mix the soy sauce, brown sugar, chili powder, cornstarch, salt and pepper. Set aside.
3. In a skillet, heat oil and fry onion, garlic and ginger. Add the carrots and stir fry for 2 minutes before adding the par boiled octopus. Pour in the prepared sauce, then add the rest of the ingredients. Do not over cooked the octopus, or else it will be rubbery. ( Note: You can add any vegetable you prefer)
4. Serve with white rice.
