Ingredients:
200 g kale
2 green apple
5 medium radish
1/2 cup dried cranberry
Dressing:
2 tbsp olive oil
2 tbsp lemon juice
1 tsp honey
1 tsp Dijon mustard
salt and pepper
Directions:
1. Soak the kale leaves in a big bowl of water and vinegar for at least 5 minutes, to remove unwanted dirt and pesticides from the kale, then rinse in a cold running water. Shake off excess water. Tear the leaves with your hands to separate from the stem then chop coarsely. Pour a tbsp of olive oil and mash it with your hands for 2 minutes for softer texture.
2. Cut the green apples and radish thinly and add to the kale and dried cranberry. Pour the dressing , taste the saltiness according to your liking. Best served fresh.
