Ingredients:
3 medium-sized whole Dennis fish, cleaned and gutted (or any kind of fish like, tilapia, milkfish, cod )
1 medium onion, chopped
3 cloves garlic, minced
3 big red tomatoes, chopped
1 tsp grated fresh ginger
2 tbsp fish sauce
2 cups water
2 eggs, slightly beaten
salt and pepper , to taste
stalks of green onion, chopped
Directions:
1. Clean the fish and sprinkle with salt. Let set for 10 minutes. Fry in hot oil until light brown on both sides .
2. In the same skillet, remove some of the oil. Leave just 1 tbsp to saute ginger, garlic and onion. Then add the chopped tomatoes , let it boil in a medium heat until tomatoes are soft.
3. Add water and fish sauce to the tomato mixture and bring to a boil. Season with salt and pepper. Add the fried fish and let it simmer for 5 minutes. Add the beaten eggs and leave it for a minute to curdle, then gently mix the eggs to distribute evenly.
4. Serve on a platter and garnish with green onions. Serve with white rice.
