Avocado, Mango and Black Bean Salad

 






Ingredients:

1 slightly ripe mango,  peeled and cubed

1 avocado, pitted, peeled and cubed

1 can black beans, washed and strained

2 medium cucumber, cut into cubes

100 gas cherry tomatoes, cut in half

1 yellow capsicum, washed and cubed

1/4 cup chopped coriander

1 medium red onion, sliced thinly

Dressing:

juice of 1 lemon

3 tbsp olive oil

1 tbsp balsamic vinegar

salt and pepper, to taste

Directions:

Mix together black beans, mango, cucumbers, tomatoes, capsicum and red onion in a medium sized bowl.

Carefully adding the avocado. Try not to mash the cubes.

Mix the lemon juice, olive oil, balsamic vinegar , salt and pepper in a small bowl.

Pour the dressing over the mixture. 

Garnish with chopped coriander.
