Ingredients:
1 cup corn meal
1 cup all purpose flour
1/2 cup sugar
1/2 cup unsalted butter
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs, slightly beaten
1 1/2 cup buttermilk ( can use fresh milk added with 1 tbsp of freshly squeezed lemon juice) Ratio 1:1
Directions:
1. Whisk together the flour, corn meal, sugar, baking powder, baking soda and salt in a large bowl.
2. If using self made buttermilk, let it stand for 5 minutes, then mix before adding to the dry ingredients.
Make a well in the center and add the buttermilk and eggs.
3. Mix together well until combine, then add the melted butter. Mix well again.
4. Pour the batter in a greased loaf pan.
5. Bake in a preheated oven at 200 C for 20 minutes or until cornbread begins to brown and toothpick inserted in the center comes out clean. Allow to cool before slicing.
