Ingredients:
1/2 cup quinoa
1 can red kidney beans
1 green apple, sliced
1 capsicum, yellow or orange, cut into cubes
cherry tomatoes, yellow or red
bunch of kale, about 100 g
Dressing
1/4 cup olive oil
juice of half of lemon
1 tbsp balsamic vinegar
salt and pepper, to taste
Direction:
1. To prepare quinoa, boil enough water in a small pot then add quinoa, mixing for a while then let it simmer for 8 minutes in a medium heat, or until the quinoa is soft. Strain the remaining water and let it cool down.
2. Wash kale to remove impurities, shake off the water to dry, cut the soft part of the leaves. Toss kale leaves with a small amount of olive oil and lemon juice, massage with hands for a minute or until roughness of kale is gone.
3. Add all the ingredients in a big bowl, then add the dressing.
