Bacon-and Blue Cheese-Stuffed Cheeseburgers



Ingredients:
4 slices applewood-smoked bacon or regular bacon
1 small red onion, finely chopped
2 tbsps crumbled blue cheese
1 tbsp butter, softened
1 1/2 pounds lean ground beef
Salt and black pepper, to taste
4 onion or regular hamburger rolls
Green leaf lettuce (optional)

Directions:
1. Cook bacon in skillet over medium-high heat until chewy;drain on paper towels and chop into small pieces. Add onion to same skillet. Cook and stir until soft. Spread on plate to cool.
2. Combine bacon,onion,blue cheese and butter in small bowl;mix well.
3. Divide ground beef into 8 equal pieces. Place 1 piece on cutting board; divide in half. Flatten each half into thin patty 4 inches wide. Season each half with salt and pepper. Place 2 tablespoons bacon mixture in center of one patty; cover with other patty. Pinch edges together to seal. Shape burger until round and slightly flattened. Season again with salt and pepper, if desired. Repeat with remaining beef and filling.
4. Spray grill grid with nonstick cooking spray. Preheat grill to medium -hot. Grill burgers about 6 minutes per side or until desired doneness. Do not flatten burgers with spatula. Remove from grill; let stand 2 minutes before serving.Place cooked burgers on onion rolls and garnish with lettuce, if desired.
