Buffalo Chicken









Ingredients:

500 gms chicken breasts, cut into cubes
1 tsp black pepper
1 tsp salt
1 tbsp lemon juice

For Breading:
1/4 cup all purpose flour
1/4 cup cornstarch
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp baking powder

For The sauce:
3 tbsp butter (unsalted)
3 cloves garlic (minced)
1 tbsp ginger (grated)
1/4 cup hot sauce ( as needed)
1/4 cup ketchup
1 tbsp brown sugar (optional)
1 tbsp soy sauce

Directions:
1.Cut the chicken breasts into cubes, add the seasonings and marinate for 1 hour.
2. Meanwhile prepare the breading by combining all the ingredients and set aside.
3. Dredge the chicken pieces in the breading.
4. Preheat oil in a large skillet to fry the chicken
5. Place a few pieces of  chicken in hot oil and fry for about 4 - 5 minutes, turn them over and cook the other side. Continue cooking with the rest of the chicken.
6.If you want a crispy chicken, heat the oil on high and fry the chicken pieces again for 3 minutes.  Remove the chicken pieces to paper towel to drain.
7. Prepare the sauce by adding all the ingredients and heating on medium heat until it thickens.
8. Add your chicken to the sauce, mix it to coat all the chicken. Put in a platter and garnish with green onions.
