Chicken Teriyaki Fried Rice





Ingredients:
250 gms chicken breast, cut into cubes
1/2  cup teriyaki sauce
2 tbsp oil
1/2 cup onion, chopped
1 tbsp garlic, minced
1 tbsp ginger, grated
1/2 cup carrots, cubed
1/2 cup frozen green peas
1/2 cup frozen corn
3 eggs, beaten
3 cups cooked rice
1 tbsp soy sauce
1 tbsp sesame oil
salt and pepper to taste
1 tbsp chopped green onion

Directions:
1. Mix the chicken cubes and the teriyaki sauce. Marinate for at least 1 hour in the refrigerator.
2. Sauté the chicken in 1tbsp oil for 5 -7 minutes till its cook. Set aside.
3. In the same skillet, stir fry in 1tbsp oil the grated ginger, garlic and onion. Add the green peas, carrots and corn, mix it till it's almost cook, push aside to give space for the beaten egg. Let it cook for a while then mix them together.
4. Add the previously cooked rice and the chicken. Mix them together, season with salt and pepper. Add a tbsp of soy sauce and sesame oil. Sprinkle chopped green onion to garnish.
