Sweet and Sour Fish






Ingredients:
1 lbs fish, cut into 1 1/2 inch cubes
3/4 tsp salt
1 tsp chopped ginger
1 egg, beaten
1/4 cup flour
1/4 cup cornstarch
1/4 cup water
2 tsp baking powder
1 onion, sliced
1 green pepper, cut into 1 1/2 inch pcs
1 large tomato, cut in chunks
oil for deep frying - 6 cups

Seasoning sauce
4 tbsps white vinegar
4 tbsps sugar
4 tbsps catsup
6 tbsps water
2 tsps cornstarch
2 tsps salt
1 tsp sesame oil

Directions:
Sprinkle fish pieces with salt and chopped ginger. Let marinate for 10-15 minutes.
Make batter with the egg, flour, 1/4 cup cornstarch, 1/4 cup water and baking powder. Set aside.
Make seasoning sauce with vinegar,sugar, catsup,water, 2 tsp cornstarch, salt and sesame oil. Mix together and set aside.
Heat the cooking oil in deep fryer or deep saucepan. Drain salty water off fish. Deep fish pieces in batter in deep fry until they are alike brown in color. Remove from oil, drain and keep warm.Place 1 tbsp of oil in a wok or heavy frying pan over medium high heat. Stir fry quickly the onion slices, green pepper and tomato. Remove from wok and keep warm.
Pour the seasoning sauce into the wok and heat until thick, stirring constantly. Pour on to the vegetables and stir well.
Pour the seasoned vegetable sauce over the fish, and serve immediately.
