Ingredients:
4 whole baking fish, medium size
juice of 1 lemon plus 1 lemon, sliced
1 tsp of ground pepper
1 tbsp of salt
1 tbsp of ground cumin
1/2 cup olive oil
1 head of garlic, finely chopped
1 cup finely chopped parsley
1/2 cup breadcrumbs
3 large potatoes, peeled and slice
3 large tomatoes, peeled and slice
Directions:
1. Clean and scale fish. Wipe dry and rub inside and out with salt, pepper, cumin and juice of lemon. Marinate for 1 hour covered in the refrigerator.
2. Peel potatoes and fry halfway through. Set aside.
3. Take a big round baking dish , large enough to accommodate fish. Sprinkle breadcrumbs over base and top with half of the chopped parsley and chopped garlic.
4. Place marinated fish in a dish and pour a little olive oil on top of the fish.
5. Arrange sliced tomatoes and fried potatoes and lemon slices over and between fish. Season tomatoes and potatoes with salt and pepper and pour remaining olive oil over dish.
5. Cover dish with aluminum foil and bake for 45 minutes. Remove cover and bake for another 15 minutes until fish and potatoes are fully cooked. Sprinkle with remaining parsley and serve hot with white rice.
