Ingredients:
4 cups bias-sliced celery
1 cup chopped red capsicum
1/2 cup green onions, chopped
1 tbsp fresh ginger, grated
1 very small onion, finely chopped
2 cloves garlic, finely chopped
1 tbsp butter
1/2 cup orange juice
1 tsp cornstarch
1 tbsp sugar
Directions:
In a large skillet over medium heat, saute ginger , onion and garlic in a butter till fragrance come out, for about 2 minutes. Toss celery, capsicum, and green onions and cook for about 5 minutes, or until celery is crisp tender.
In a small bowl, combine orange juice and cornstarch and sugar, then add to the vegetables. Cook until mixture thickens, about 1 minute. Serve with white rice.
