Ingredients:
500g beef, cubes
3 tbsp vegetable oil
1 medium onion, chopped
1 whole garlic, chopped
3 medium tomatoes, chopped
400g fresh or frozen okra
salt and black ground pepper
2 beef or chicken cube stock
2 tbsp tomato paste
1 liter of hot water
Direction:
1. In a big cooking pot, fry the chopped garlic in 3 tbsp oil till golden brown. Set aside most of it with 1tbsp of hot oil, for garnishing. Add chopped onion to the remaining garlic, let it cook till translucent , then add tomatoes.
2. Add the cubed meat to the mixture, stir for a while till meat changes its color then add hot water. Keep it boiling for 45 minutes or until meat is tender.
3. Add the beef cube stock, tomato paste and okra and let it simmer for 20 minutes or until okra and meat are cooked. Season with salt and pepper. Add the reserved browned garlic , mix, then let it simmer for 2 minutes. Best serve with white rice.
