Easy Orange Cake (Microwaved Cake)








Ingredients:
1 cup fresh orange juice
3/4 cup sugar
1 cup flour
1 tbsp baking powder
1/8 tsp baking soda
1 tsp vanilla
1 egg, slightly beaten
6 tbsp milk
6 tbsp oil
1 tbsp orange zest
200 g dried fruits (raisins,  cranberry, chopped apricot)

Direction:
1. Squeeze 2 fresh orange to make 1 cup of orange juice. Add the orange juice with 3/4 cup of sugar in a small pot. Cook in a slow flame, stirring constantly to dissolve the sugar. Keep cooking till it become syrupy, it will reduce almost half the original quantity. Remove from heat and let it cool completely. Set aside.
2. In a large mixing bowl, combine flour, baking powder and baking soda. Mix well then add the slightly beaten egg, oil, vanilla, the cooled orange syrup and the orange zest. Mix the mixture thoroughly then add half of the dried fruits.
3. Grease a microwave safe bowl then dust with a little flour. Pour the batter mixture in the bowl, then add the half dried fruit mixture at the top. Place the bowl in the microwave and cook for 5 minutes. Use a toothpick to check if the cake is cooked. Take out the cake from the microwave, and keep it to cool down for 10 minutes before cutting.
