Ingredients:
1 bunch red leaf lettuce
1 bunch rocket leaves
2 medium cucumber, cut half-moon
1 medium tomato, cut into cubes
1 avocado, cut into cubes
1 yellow bell pepper, cubed
1/2 red onion, sliced thinly
2 scallions, sliced, green parts only
Dressing:
1/4 cup balsamic vinegar
juice of half lemon
1/4 cup olive oil
1 clove garlic, minced
ground pepper and salt to taste
pinch of cayenne pepper
Direction:
1. Mix the dressing in a medium bowl and set aside.
2. Wash and clean all the greens and strain to remove the excess water. Mix in a serving bowl and pour dressing on it just before serving.
