Ingredients:
1/2 head of small green cabbage, slice thinly
1 medium carrots, peeled and grated roughly
1/2 red capsicum, sliced thinly
1/2 yellow capsicum, slice thinly
1 cup fresh coriander leaves
2 green onions, chopped
1/2 cup roasted sunflower seeds
1/2 cup Creamy Avocado Dressing****
**** Avocado Dressing Ingredients
1 whole ripe avocado, peeled and stoned
1 tbsp olive oil
juice of 1 lemon
1 tsp salt
1/4 tsp white pepper
1/2 cup water
1 tsp lemon zest
1 tsp Dijon mustard
1 tsp honey
1 garlic clove, minced
Combine all the ingredients for the dressing in a blender and blend it to till smooth. Keep in the refrigerator and add it to the salad just before serving. Sprinkle roasted sunflower seeds to garnish.
